Our filleters are true professionals! They may have previously worked in a production environment in the food industry, where they gained experience in professional knife handling, such as in slaughterhouses or in a fish processing environment.
If new colleagues do not yet have such experience, but are eager to master this skill of using artisan knives, they will be trained and supervised in their learning during the familiarization period.
Filleting work involves precise and fast cutting. The work is done standing up in a refrigerated environment, so our workers are energetic, physically fit and have stamina.
